Pancit Malabon
Pancit Malabon is a noodle dish from Malabon in Metro Manila. It uses thick rice noodles in an orange sauce. The sauce gets its colour from annatto and its taste from shrimp broth, fish sauce and crab fat. Cooks top it with local seafood, eggs and crushed pork rind.
