About Baliwag City
Baliwag chicharon is the pasalubong, sold by the bagful along the road and crisp enough to justify the stop. The city also argues with its own spelling: Baliwag in official papers, Baliuag for the old downtown, and both are correct depending which you mean. The name comes from a Kapampangan word meaning untouched, which stopped being accurate a long time ago.
